I love this salad dressing. Works great as a dip with fried tofu too.
1 tbsp. peanut butter
3 tbsp. balsamic vinegar
1 tbsp. lemon juice
12oz soft tofu
3 tbsp. maple syrup
2 cloves garlic
1 tbsp. Dijon mustard
Blend well. I added some tamari and a bit of soy milk to thin it out.
