2 cups shredded coconut
1/2 cup tahini
1/2 cup maple syrup
1/2 cup melted coconut oil
1 tsp vanilla
1/2 tsp salt

Combine tahini, syrup, oil, vanilla and salt until well combined. Add the coconut and mix well. Drop cookies on a cookie sheet cover and freeze at least 30 minutes. Store in freezer.
